Nanny's recipe for apple slices

Apple slices just taste better when they’re homemade. In the 18th century, apple slices were a thin slice of apple, dipped in batter and fried in butter on the pan - today, it's rare to find actual apple in these treats. Try Nanny’s recipe for apple slices for an authentic experience!

Nanny's æbleskiver

Ingredients
Serves 6

1/2 vanilla pod
320 g all-purpose flour
2 tsp sugar
1 1/2 tsp ground cardamom
1/2 tsp baking powder
1/2 tsp salt
Zest of 1 organic lemon, grated
3 eggs
4 1/2 dl milk
30 g melted butter
2 tbsp butter
Powdered sugar


Instructions 

Mix the flour, lemon zest, sugar, cardamom, baking soda, and salt in a bowl. 

Separate the eggs and beat the egg whites until stiff in another bowl. 

Stir the melted butter into the batter. Finally, gently fold in the beaten egg whites and pour the batter into a pitcher. 

Heat the pan well and add a generous amount of butter to each hole. 

Pour the batter from a pitcher, filling each hole in the pan halfway. 

Once the apple slices are baked on one side, you can traditionally add a spoonful of apple compote or a small apple piece on top. However, we prefer to serve the fruit on the side, as it helps the apple slices rise better. 

Serve as warm as possible and sprinkle with powdered sugar or regular sugar.
